Tall John’s is expanding our kitchen management team for the first time. We are currently looking for an experienced Sous Chef to join us as we continue to experience exciting growth and evolve our team to meet the needs of one of Asheville’s busiest restaurants. The PM Sous Chef is a new position created to help lead BOH operations with the Executive Chef and AM Sous Chef. As a critical member of the culinary team, a successful Sous Chef will prioritize positivity, communication, collaboration, creativity and flexibility.

PM SOUS CHEF JOB OVERVIEW: GENERAL EXPECTATION & RESPONSIBILITIES
Demonstrate the ability to work and lead in a team-driven environment, taking and giving direction effectively and working in collaboration with the kitchen management team.
Present a unified and honest voice, representing the goals of the management team.
Ensure clear communication on all matters with the Executive Chef & AM Sous Chef
Attend and participate in management team meetings.

Act as a mentor for all BOH staff, assisting in their training and development.

Assist Executive Chef & AM Sous Chef in making personnel decisions and actions, including hiring, termination, training, scheduling, promotion, etc. Maintain a complete understanding of staffing needs, obstacles, etc.
Flexibility to work any station in the restaurant (expo, prep, cold side, grill, saute & new stations as they are created) when staffing demands or changes are made.
Have a depth of knowledge and general passion for all aspects of cooking: sourcing of ingredients, cooking techniques, setting up stations and a willingness to learn new recipes.

Audit all kitchen areas and staff for compliance with health code.

PM SOUS CHEF ROLE PRIMARY RESPONSIBILITIES
Oversees, manages & expedites Dinner Service.
Ensures line is set up for Dinner Service daily.
Produces consistent, quality dishes in a fast-paced environment.
Perseveres through challenging services while upholding standards and values.
Assists with menu development, planning & specials.
Oversees & manages nighttime prep in collaboration with AM Sous Chef.
Covers any station during Dinner Service or Brunch Service when needed.
Collaborates & communicates daily with AM Sous Chef about needs/urgencies for Dinner Service.
Works with AM Sous Chef to ensure prep projects are completed daily.
Collaborates with AM Sous Chef for scheduling of BOH staff.
Assists with inventory to support the kitchen operating at a sustainable food cost.
Manages service kitchen cleanliness, breakdown & organization.
Nightly ordering and organization of prep lists to ensure a smooth handoff to the AM Sous Chef.
SCHEDULE
Approx. 50-55 hours per week. Generally 5 days per week, one day not working service.

The Dishwasher is paid $16/hour + a share of the 5% BOH gratuity applied to all checks. This BOH gratuity works like a tip does for servers, but it’s fixed, and it raises the hourly rate to $21/hour or higher.
